Summer Peach and Blueberry Buttermilk Cobbler

Sweet summer peaches and fresh blueberries combined make a special dessert. Learn how to make an easy fruit cobbler that is sure to impress. Using just a few ingredients and some store bought ice cream to make this a little something extra. If it’s not summer and you aren’t able to get fresh peaches or blueberries you can always use frozen fruit. Just make sure to defrost them first.

Ingredients

  • 4 peaches

  • 1/2 cup of blueberries

  • 1 cup of self rising flour

  • 1 cup of sugar

  • 1/4 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 1/2 cup of buttermilk

  • 1/2 cup of melted unsalted butter

Directions

  • Preheat oven to 350 degrees F.
  • In a 8 x 8 baking dish, spray with non-stick cooking spray, or butter dish.
  • Place sliced peaches and blueberries at the bottom of the dish. 
  • In a large bowl mix flour, sugar, cinnamon, vanilla, buttermilk, and melted butter together. It's okay if it is a little lumpy. Pour batter evenly over fruit.
  • Place in oven and bake for 45 minutes. The last 5 minutes turn oven up to 425 to brown the top.
  • Let the cobbler cool for 10 -15 minutes before serving. For an extra treat top with vanilla ice cream.
