These fluffy cookies scream Fall! This recipe originally came from my mother in-law and is a favorite in our house, so much so that we make them every year. Pumpkin Cookies with Brown Sugar Icing

- Pumpkin Cookies
1 cup granulated sugar
1 cup shortening
1 cup pumpkin
1 egg
2 cups all purpose flour
2 tsp baking soda
2 tsp cinnamon
2 tsp salt
- Brown Sugar Icing
3 tbsp unsalted butter
4 tsp milk
1/2 cup dark brown sugar
1 cup confectioners sugar
1/2 tsp vanilla extract
Directions
- Pumpkin Cookies
- Preheat oven to 375 degrees F.
- Mix sugar, shortening, and pumpkin until creamed well. Add egg and mix.
- Combine dry ingredients and add to pumpkin mixture. Mix well.
- Drop by teaspoon on lightly greased cookie sheet 1/2 inch apart.
- Bake for 10 minutes, and remove to cool on cooling rack.
- Brown Sugar Icing
- In a small saucepan melt butter, brown sugar, and milk. Do not bring to a boil. Just warm till sugar dissolves. Remove from the heat and allow to cool to room temperature.
- Once cooled add confectioners sugar and vanilla. Beat mixture until smooth. Icing will be thick.
- Spread icing on warm cookies with a spoon.
