Pumpkin cookies with brown sugar frosting

These fluffy cookies scream Fall!  This recipe originally came from my mother in-law and is a favorite in our house, so much so that we make them every year. These cookies are a one bite fluffy little cake with brown sugar icing. The pumpkin and cinnamon are a match made in heaven. Hope you’ll give these a try!

Pumpkin Cookies with Brown Sugar Icing

Ingredients

  • Pumpkin Cookies
  • 1 cup granulated sugar

  • 1 cup shortening

  • 1 cup pumpkin

  • 1 egg

  • 2 cups all purpose flour

  • 2 tsp baking soda

  • 2 tsp cinnamon

  • 2 tsp salt

  • Brown Sugar Icing
  • 3 tbsp unsalted butter

  • 4 tsp milk

  • 1/2 cup dark brown sugar

  • 1 cup confectioners sugar

  • 1/2 tsp vanilla extract

Directions

  • Pumpkin Cookies
  • Preheat oven to 375 degrees F.
  • Mix sugar, shortening, and pumpkin until creamed well. Add egg and mix.
  • Combine dry ingredients and add to pumpkin mixture. Mix well.
  • Drop by teaspoon on lightly greased cookie sheet 1/2 inch apart.
  • Bake for 10 minutes, and remove to cool on cooling rack.
  • Brown Sugar Icing
  • In a small saucepan melt butter, brown sugar, and milk. Do not bring to a boil. Just warm till sugar dissolves. Remove from the heat and allow to cool to room temperature.
  • Once cooled add confectioners sugar and vanilla. Beat mixture until smooth. Icing will be thick.
  • Spread icing on warm cookies with a spoon.
