2 lbs of tomatoes
1/3 cup basil leaves, chopped
1 large clove of garlic, chopped
1 Tbsp extra virgin Olive oil
1/4 tsp sea salt
Directions
- Dice tomatoes. Drain any excess juice and transfer to a medium bowl.
- Finely mince garlic and basil. Add to the bowl of tomatoes.
- Season tomatoes with olive oil and salt.
- Stir gently until everything is combined. Set aside for 15-30 minutes to marinate. Serve with crusty toasted bread and an extra drizzle of olive oil or balsamic vinegar.
