Cheesy Chicken Broccoli Bake

This recipe is one that I’ve made several times. It’s an easy dump and bake recipe that can be put together in no time. The baking time is needed to ensure that the pasta and chicken are done completely. If you’re not a fan or broccoli try using another vegetable such as leeks! We used rotini, but any pasta on hand will do! Hope you enjoy!

Ingredients

  • 8 oz rotini pasta

  • 1/4 cup all purpose flour

  • 1 1/2 cups of chicken broth

  • 2 cups of milk

  • 1/2 tsp thyme

  • 2 Tbs unsalted butter

  • 12 oz chicken breast, cut into pieces

  • 1 head of broccoli, cut into florets

  • 2 1/2 cups cheddar cheese

  • Salt and Pepper to taste

Directions

  • Preheat oven to 400 degrees F. Prepare a large casserole dish by spraying with nonstick cooking spray or coating with butter.
  • Spread dry uncooked pasta in prepared casserole dish and set aside.
  • In a medium sized bowl whisk chicken broth slowly with flour to incorporate to create a slurry which will reduce lumps. Once all of the chicken broth has been added stir in milk.
  • Pour chicken broth and milk mixture over dry pasta. Add chicken, broccoli florets, thyme, and mix well. Make sure the mixture is evenly distributed in the casserole dish. Cover dish with aluminum foil or lid.
  • Place in preheated oven for 30 minutes. Remove cover and add half the cheese, then stir well. Continue cooking uncovered for an additional 20 minutes before adding the remaining cheese on top. Cook for the last 10 minutes so cheese will melt.
  • Remove from the oven and let it cool for 10 minutes before serving. The pasta will thicken up more once it has cooled. Enjoy!

Notes

  • You can use frozen broccoli if you have that available. Cook broccoli first and squeeze out as much water as possible before adding to casserole.
