Easy Air Fryer Bruschetta Chicken

4 Chicken breast
8 slices of fresh mozzarella
1 Tbsp of Italian seasoning
1 lbs. of tomatoes, chopped
3 Tbsp of fresh basil, chopped
1 small clove of garlic, chopped
1/2 Tbsp extra virgin olive oil
1/8 tsp sea salt
Directions
- Preheat air fryer to 400 degrees F.
- Place chicken breast in a gallon sized resealable plastic bag and pound chicken with mallet or rolling pin until chicken is 1 inch thick. Remove chicken from the bag and season with Italian seasoning, salt, and pepper. Repeat with all 4 chicken breast.
- In a medium size bowl, add tomatoes, basil, garlic, salt and olive oil together. Gently toss, and set aside to marinate for 15-30 minutes.
- Spray air fryer with non-stick cooking spray, and place chicken breasts in basket. Cook for 25 minutes until internal temperature is 165 degrees. 5 minutes before done place two pieces of mozzarella on top to melt.
- Remove chicken from the air fryer and top with the tomato mixture. Enjoy!
