Hawaiian Banana Nut Bread

This banana bread is moist with just the right amount of sweetness. With the addition of nuts and pineapple how can you go wrong? This recipe came from my mother in-law, and she is quite the baker. We did another recipe of hers for pumpkin cookies with brown sugar icing. Anyway, whenever we make this banana bread it disappears fast. It is simple to make with a handful ingredients.

Ingredients

  • 3 cups of all purpose flour

  • 2 cups of sugar

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 cup pecans, chopped

  • 1 1/2 cup of vegetable oil

  • 3 eggs, beaten

  • 2 cups ripe bananas, mashed

  • 1 8oz can of crushed pineapple, drained

  • 2 tsp vanilla extract

Directions

  • Preheat the oven to 350°F. Grease two bread pans (9.25 long x 5.25 wide x 2.75 deep). Set aside.
  • In a large bowl combine dry ingredients, including nuts and set aside.
  • In a medium bowl combine remainder of ingredients.
  • Combine banana mixture to dry ingredients and stir until just moistened.
  • Spoon batter into the two bread pans evenly. Bake for 1 hour or until toothpick comes out dry. Cool on wire racks before removing from the pans.
